Cipollino salad
This is a salad my mom used to make when I was young and to date I still love it to bits. I’d wager it isn’t widely known by that name, but the name is pretty self explanatory.
For roughly four people, you’ll need:
- three large onions, the sharper the better
- 500g of Chinese cabbage
- 400g of mayo
- 200g of sour cream, watery varieties work better
- ample salt and pepper
- a big bowl
Optionally:
- 400g of mixed minced meat
- garlic and spices of preference for frying the mince
To prepare, chop up the green part of the cabbage and dispose of the white stem part. Chop the onions to small-to-medium sized pieces. Mix the cabbage, onion, mayo and sour cream with ample salt and pepper. The amount of salt and pepper you need for a portion of this size is probably larger than you’d expect on your first try. Mix thoroughly, and you’re done.
If you want a heartier meal, fry the minced meat with spices of your liking and then mix it in with the rest of it.
